Try making a batch of my homemade granola. It's delicious, and uses maple syrup instead of refined sugar giving it a low score on the glycemic index; this makes it an excellent choice to maintain stable blood sugar first thing in the morning!
Breakfast is often called ‘the most important meal of the day’, and for good reason. As the name suggests, breakfast breaks the overnight fasting period. It replenishes your supply of glucose to boost your energy levels and alertness, while also providing other essential nutrients required for good health.

Recipe
Ingredients:
2 tablespoons coconut oil
2 tablespoons maple syrup
1 teaspoon vanilla extract
300g jumbo rolled oats
50g sunflower seeds
50g pumpkin seeds
4 tablespoons sesame seeds
100g flaked almonds
200g walnuts (smashed into pieces)
Method:
Heat a fan oven to 130 degrees
Line 2 baking sheets with baking paper
Melt the coconut oil and add the maple syrup
Stir in the oats and add the nuts
Spread the mixture onto the two lined baking trays
Bake for 15 minutes then stir around and bake for another 15 minutes
Allow to cool completely before putting in an air tight container (if it isn’t cool, it won’t stay crisp!)
Add some dried fruit if you like!
